Elizabeth Hudson, PhD, MPH, RDN

Dr. Hudson is a registered dietitian with over 15 years of clinical experience, specializing in medical nutrition therapy across diverse clinical settings, including inpatient care, outpatient cancer care, and pediatric allergy and immunology. As a trained epidemiologist, she brings expertise in studying the links between diet and health outcomes, with a focus on adolescent health. Dr. Hudson is the lead instructor for the MPH Core Curriculum, where she is committed to advancing public health and mentoring future dietitians and public health professionals.
